Before they reach your mug, coffee begins its life as a vibrant fruit (Review), growing in clusters on trees in tropical climates. These small, often red or yellow, fruits are commonly called coffee cherries, and within each one lies the precious cargo that eventually becomes our beloved brew. Botanically, the coffee cherry is classified as a drupe, a fleshy fruit with a hard inner shell encasing a seed, much like a peach or an olive. Typically, each cherry holds two seeds, nestled face-to-face, though sometimes a single, rounder seed known as a peaberry can form.

To get to these seeds, which we commonly call "beans," the coffee cherries undergo meticulous processing. Farmers employ either a wet or a dry method to remove the outer layers of the fruit. In the dry method, the entire cherry is dried in the sun, allowing the fruit to shrivel around the seed before being hulled. The wet method involves pulping the cherries to remove the skin and most of the pulp, followed by fermentation and washing to strip away any remaining sticky mucilage before the seeds are dried. Each method imparts distinct flavor characteristics to the resulting coffee.

The stimulating properties of these unique seeds are said to have been discovered centuries ago in Ethiopia. Legend has it that a goat herder named Kaldi noticed his goats became unusually energetic and wouldn't sleep at night after eating the bright red cherries from a particular shrub. Curious, Kaldi tried the fruit himself and experienced a similar invigorating effect. He reportedly shared his discovery with a local monastery, where monks, initially wary, eventually found that a drink made from the roasted seeds helped them stay awake during long hours of prayer.
