The idea that specific regions of the tongue (Review) are solely responsible for detecting certain tastes, often depicted as a "tongue map" with zones for sweet, sour, bitter, and salty, is a widespread misconception. This myth originated from a misinterpretation of a 1901 German paper by scientist D.P. Hänig, which explored the varying sensitivities of different parts of the tongue to tastes. Hänig's research indicated slight differences in detection thresholds, not exclusive zones. Decades later, in the 1940s, Harvard psychology professor Edwin Boring inaccurately reinterpreted and redrew Hänig's data, exaggerating these subtle variations into distinct, isolated taste areas, which then became widely disseminated.
Modern scientific understanding, however, clearly debunks this simplistic "tongue map." Research, notably by Virginia Collings in 1974, demonstrated that all taste buds, which are distributed across the entire tongue, are capable of detecting all five basic tastes: sweet, sour, salty, bitter, and umami. While some areas might indeed be *slightly* more sensitive to certain tastes, there are no strict boundaries where one taste ends and another begins. Each taste bud contains various receptor cells, with some specialized to sense sweetness, others sourness, and so on, allowing for a comprehensive taste experience across the oral cavity.
This persistent myth likely endures due to its appealing simplicity and memorable visual representation, making it an easy concept to teach and grasp, often appearing in educational materials and textbooks for decades. However, a simple at-home experiment can prove it wrong: try placing salt on the tip of your tongue, or sugar on the back. You will find that you can taste all sensations in all areas.
