As the cherries pass through the civet's digestive system, naturally occurring enzymes and gastric juices initiate a fermentation process. These enzymes are believed to break down certain proteins within the coffee beans, particularly those that contribute to bitterness, while also altering the beans' chemical composition, impacting their amino acid profile and enhancing their aroma.
